Made from the best grapes from Grand Cru vineyards in Aÿ & Côtes des Blancs, the appearance is straw yellow with fine delightful bubbles with aromas of toasty brioche, slightly savoury, nutty and baked apple flavours which follow through to a crisp, complex and flavoursome finish. The Champagne Vintage Report - 2012 is considered as one of the best vintages with outstanding but small crop of Pinot Noir, best since 1952. Sourced exclusively from vineyards officially classified Grand Cru – Chardonnay from the Côtes des Blancs and Pinot Noir from Aÿ. The provenance of the grapes enables a low dosage to express the purity and the richness of these terroirs. The grapes alcoholic fermentation is with Lallier’s ‘in-house’ yeasts (cultivated from the Loridon vineyard) and the wine undergoes partial malo-lactic fermentation. With a 7g/L dosage, the bottles are matured on their lees and aged for more than 5 years in Lallier's old underground cellars.

Meet The Winemaker - Francis Tribault - He is extremely rigorous in his management of production and personally oversees the selection of the grapes. He can often be seen running from press to press at harvest time. Whilst so many aim for higher and higher production levels, Champagne Lallier has chosen the wiser path: a limited production of 400,000 bottles per year. For Francis Tribaut, this is the only way to meet the rigorous in-house quality demands as well as those of its loyal customers.
