Lyre's Clover Club

Like many of the pre-Prohibition stalwarts, the Clover Club was rediscovered, and is rightfully considered a classic, with the combination of egg whites, raspberry syrup and fresh raspberries making for a delightfully fruity treat. Add all ingredients in a shaker, give it a mix, add ice, shake hard and strain into a coupe. Garnish with fresh raspberries.

10ml premium raspberry syrup
30ml lemon juice
10ml pasturised egg white OR Vegan Alternative - Chickpea juice
5ml white sugar syrup (1:1)
4 fresh raspberries

Take a mule and mojito with a good slug of Lyre’s Dry London Spirit and you’ll end up with the Gin Gin Mule. This modern classic was created in NYC’s Pegu Club and it’s a snappy, delicious highball so refreshing it’s truly memorable. The ingredients are also in the title, gin and gin(ger). Add all ingredients into a glass, fill with ice, stir and sip!
